Oooooh, we love a pulse recipe on this blog, we do...
"I thought I'd send this recipe as minimoo has been devouring these beanburgers for a while.
Ingredients
1 tablespoon oil
1 onion
2 garlic cloves
1 small chilli (I didn't add this)
100g frozen chopped spinach, thawed (Didn't have any frozen so I used half a bag of spinach)
400g can cannellini beans
50g breadcrumbs
1 teaspoon ground cumin
1 tablespoon ground coriander
Heat the oil and cook onion and garlic (and chilli if you're brave) for 5 mins until softened. Meanwhile cook spinach in a pan with a little water if it's not frozen. Squeeze excess moisture out of the spinach.
Mash beans well and mix with spinach, breadcrumbs, cumin and coriander. Add the onion mixture and stir well.
Think I got about 8-10 burgers from this. Minimoo loves them."

Minimoo's favourite spinach-y beanburgers

Re: Minimoo's favourite spinach-y beanburgers
Good Lord these are delicious. I improvised slightly with borlotti beans instead of cannelloni, but they tasted great. also couldn't find the masher so just squished them through my fingers to mix, which was fine.
Babybear enjoyed them, as did her father and i (albeit we whacked some tabasco, lemon and salt onto ours. sometimes you can take this 'no condiments' lark too far). Re: Re: Minimoo's favourite spinach-y beanburgers

Oooh, these sound definitely worth a try..
I take it you just fry in oil to cook them? Re: Re: Re: Minimoo's favourite spinach-y beanburgers
yep, they were lovely. gently, though. i kinda burned the first one... (and then ate it myself, obviously).

Can't believe I didn't put in cooking details. Lightly fry or grill. Will try grilling this time as I seem to be frying lots for minimoo at the moment and it doesn't feel quite right!

I'm crazy for freezing individual bites for the bubs (I'm really terrible at planning meals ahead), but I want to try this because I'm trying to figure out how to get spinach into his majesty.
Any advice about this one? Fry up little ones and then freeze, or make up patties and freeze, then defrost and fry? Re: Re: Minimoo's favourite spinach-y beanburgers
i'd opt for the latter, probably, as they taste so much nicer when freshly crisped on the outside.

I'm truly lazy and fry then freeze. That way I take them out of the freezer the night before and pop them in his packed lunch for the childminder. They would definitely be tastier to defrost then fry.

heh. a woman after my own heart.
Perhaps on the first batch I'll do some both ways... that way I can see how good they are but also have the laziest out in the world. Minimoo's favourite spinach-y beanburgers - what did i do wrong???

Help! I think I have done something wrong, these burgers fell apart and crumbled the moment they were touched. Do i need to add some water in the mixing stage to bind them a bit? J got a little taste of one and seemed to desparately want to eat more but just couldn't pick any up because they had turned to crumbs. I tried helping him put some in his mouth but that just resulted in a lot of screaming. Any tips??
Re: Minimoo's favourite spinach-y beanburgers - what did i do wrong???
maybe not enough oil? too many breadcrumbs? i suppose that it might even depend on the consistency of the breadcrumbs... they should be quite squidgy, i think. oh, and if you're frying them get the oil good and hot before they go in as that can help keep them together.
there is a school of thought, by the way, that says you really shouldn't put things in the babies' mouths (i don't know if you did, by the way) because it affects their ability to control the food when it goes in. Re: Minimoo's favourite spinach-y beanburgers - what did i do wrong???

Mine were very wettish. Of course, I rarely follow directions perfectly, and I added some vinegar because it seemed delicious and don't know if I used exactly the right amount of breadcrumbs (we don't do grams here.)
So, I had rather the opposite problem, that they were very delicate and easily smooshed. This made them ever so delicious because their texture was really nice to eat. Mine were just dry enough that they could be formed into patties. Re: Re: Minimoo's favourite spinach-y beanburgers - what did i do wrong???

I'm sorry about that, no idea how to rectify it as this is one of the few things I make that usually does stick together. I'm leaning towards breadcrumbs being something towards the answer!!
Well, that was helpful wasn't it ;) Trackbacks
