"Fab and Healthy Banana cake
4 oz self raising wholemeal flour
half tsp mixed spice
2 oz butter
3 oz raisins
8 oz banana
1 egg, beaten
Preheat oven to 180 / gm 4.
Mix
flour and spice, rub in butter and stir in raisins. In a separate bowl,
mash the banana and egg. Stir into the flour mixture and put into a
well-greased tin (fills a small loaf tin I think or I usually double up
the quantities and put it in an 8" circular cake tin). Turn oven down
to GM 3 / 160 C and cook on the middle shelf for 1 hour or until
cooked.
I usually cover it with a mixture of philadelphia cream
cheese and fruit spread (about 2 parts cream cheese to one part fruit
spread / jam). I blend them together in the liquidiser. However it is
good just by itself as well."

I've been lurking for ages but didn't really have anything to add so far. However, I just have to comment on Franny's cake. It's absolutely scrumptious! And the most exciting thing is, I can share it with DS who's 8 months old, since there's no sugar in it. Yay!

Very, very nice Franny. IzzyMouse has smeared generous portions into the carpet and some even made it into her mouth. She's a bit hit and miss with trying it, but she's like that with everything at the moment. And whatever she leaves, poor mummy has to finish up. What a chore.
Only thing is, I can't get it to do much rising. My version is more a slab than a cake. Maybe I'm using the wrong size tin. Maybe I'm just a rubbish cook. Dunno. Any suggestions? Re: Re: Franny's Fab and Healthy Banana Cake

Hmm. I am not convinced it does much rising when I cook it either. It certainly isn't the light and fluffy sponge kind of cake. As it says in the recipe, I usually double up quantities if I want to put it in a cake tin. It's kind of stodgy, sweet and tasty - and yes, a bit slab like.

I've been knicking reciepes of this site for awhile but never posted anything, just thought I'd post to say that this is a fab and dead easy reciepe. I have changed it slightly by using the mixture to make cup cakes which I feed my little one in the morning - slightly warmed and with some unsalted butter, hmmmmmm

do you have to use wholemeal flour? i don't have any in the house at the moment but i've got half a hundredweight of stinky bananas needing used up.

Not sure Aitch but Kami's rival muffins (which are delicious when done half and half as suggested wholemeal and plain and done half quantities and made into a loaf) phew can be done with plain. Maybe you could substitute some of the plain for oatmeal (unless the flour is SR which I haven't checked)
