Drop Scones
100g/4oz self raising flour
1tsp baking powder
25g/1oz caster sugar
pinch of salt
1 egg
125ml/4fl oz milk
sunflower oil for greasing
Sift the flour and baking powder into a
bowl, add the sugar and salt. Make a well in the middle, crack in the egg.
Whisk, gradually drawing the the flour from the edges, add the milk slowly
while whisking to form a smooth batter.
Heat a lightly greased frying pan over a
moderate heat. Drop 3 tbsps of batter into the pan keeping them well apart.
Cook for 2 mins until bubbles appear on
the surface and they are golden underneath, then turn over and cook until
golden on the other side. Should make 12.
