I could kiss Bat and Aitch for this recipe. Aitch will know how impressed I am by the fact that I have bothered to leave a comment! Made these at lunchtime for dd, and her usual routine of initially throwing anything she doesn't recognise on the floor was skipped - in they went, and in they carried on going until she'd eaten all of her share. Dh and I even started to feel a little guilty that we'd eaten some and there were none left, as we're so unused to her actually finishing a meal. Now all I need is a way to persuade her to the eat the spinach that I served them with (we didn't do the salsa)! Should add that the recipe quantity makes rather a lot - I halved it and got 4 patties for dd, plus 2 each for dh and I.
